Workshop: Harvesting American Groundnuts & Jerusalem Artichokes

The American Groundnut, also known as the potato bean or hopniss, is a perennial climbing vine in the pea family that produces edible, protein-rich root tubers and bean pods.

Whether you call it a Jerusalem Artichoke, sunchoke or sunroot, learn about this knobby root vegetable that is actually the tuber of a specific North American sunflower species. and slightly earthy, with a taste similar to a cross between a potato and a water chestnut or artichoke heart.
