Workshop: Harvesting Jerusalem Artichokes
Whether you call it a Jerusalem Artichoke, sunchoke or sunroot, learn about this knobby root vegetable that is actually the tuber of a specific North American sunflower species.
Flavor: Sweet, nutty, and slightly earthy, with a taste similar to a cross between a potato and a water chestnut or artichoke heart.
Texture: Crisp and crunchy when raw, and smooth or potato-like when cooked.
Starch-free: Unlike regular potatoes, they contain no starch; instead, they store carbohydrates as inulin, a healthy prebiotic fiber.
